Abstract

บทคัดย่อ

งานวิจัยนี้ศึกษาเกี่ยวกับสมการการอบแห้งภายใต้สภาวะสุญญากาศ โดยใช้สมการดิฟเฟอเรนซ์เชี่ยล 3 สมการมาอธิบายเกี่ยวกับการถ่ายเทความร้อนและการถ่ายเทมวลภายในวัสดุอบแห้ง และใช้ทฤษฎีทางไฟไนท์ดิฟเฟอเรนซ์มาแก้สมการ แล้วใช้โปรแกรมทางคอมพิวเตอร์มาช่วยในการคำนวณและทำนายผล สำหรับวัสดุอบแห้งที่ใช้ในการศึกษานี้ประกอบไปด้วย แครอท กล้วย และข่า มาทำการอบแห้งภายใต้สภาวะสุญญากาศโดยใช้ความร้อนจากเครื่องสูบความร้อน จากนั้นจะนำเอาผลการทำนายที่ได้จากสมการไปเปรียบเทียบกับผลที่ได้จากการทดลองเพื่อตรวจสอบความถูกต้อง กำหนดให้วัสดุอบแห้งมีลักษณะเป็นรูปแบบทรงกระบอกสั้นและมีการถ่ายเทความร้อนและการถ่ายเทมวลในรูปแบบ 2 มิติ จากผลการทดลองอบแห้งวัสดุทั้ง 3 ชนิด พบว่าเมื่ออุณหภูมิอบแห้งสูง ความดันอบแห้งต่ำ จะมีอัตราการอบแห้งสูง ใช้เวลาในการอบแห้งน้อย  และพบว่าสมการที่ใช้ในการคำนวณให้ผลการทำนายปริมาณความชื้นมีแนวโน้มสอดคล้องกับผลการทดลองอบแห้งได้เป็นอย่างดี (R-Square > 0.95 และ Stand Error มีค่าเข้าใกล้ศูนย์) โดยความดันที่ใช้ในการอบแห้งมีอิทธิพลต่ออัตราการอบแห้งมากกว่าอุณหภูมิอบแห้ง

 

ABSTRACT

This thesis deals with a drying model under vacuum. The drying model consists of three differential equations describing heat and mass transfer of the drying product. The finite-difference technique was used to solve the three equations simultaneously. The drying model was coded into a computer program which was used to simulate the drying of three different agricultural products including carrot, banana and galangal under vacuum with the heat being supplied by the heat pump. Actual drying experiments of the products were conducted for the purpose of verifying the drying model. The drying product was assumed in short cylinder and two dimensions heat and mass transfer. Both experimental and simulation results of carrot, banana and galangal drying showed that higher drying temperature and lower drying pressure increased the drying rate resulting in shorter drying time. It was also found that the finite-difference drying model predicted drying results with good accuracy. In most cases, the R-square value was greater than 0.95 and the standard error approached zero. Furthermore, it was discovered that the drying pressure was more influential on drying than the drying temperature.
